Popsicles are a delicious snack or dessert during the hot days of summer. Organic strawberries are recommended since conventional strawberries tend to have extremely high pesticide residue and are in the Dirty Dozen.
Ingredients:
2 fresh organic strawberries
1/3 cup fresh or frozen organic strawberries
1 cup water
1/3 cup clover honey simple syrup
1/3 cup lemon juice
Instructions:
- Remove the stems from the two fresh strawberries, cut them in half and then cut them in thin slices. Divide the strawberry pieces evenly among the popsicle molds. Alternately, you can use small paper cups.
- For the 1/3 cup, if strawberries are frozen, defrost them until they’re soft. With a hand mixer, blend the strawberries until they are pureed and no larger pieces are visible.
- Mix the strawberries, water, simple syrup, and lemon juice in a medium bowl or pitcher. Taste the mixture. Add more water if it’s too sweet for your taste, or more lemon if you like a more sour taste. Pour the mixture into popsicle molds or small paper cups. Store in the freezer until frozen. If using small paper cups, place a popsicle stick in the middle of the cup when it begins to freeze but isn’t solid.
- Serve immediately when frozen or store for up to two weeks. If you have any leftover popsicle mix, enjoy it as a drink!
